My Bread Recipe

I have been making wheat bread in my Bosch for about 4 years. I love the recipe the I have and have tried others...always returning to this recipe. I got it from my friend Gina from Utah. It is really delicious and stays fresh for a long time. It makes 5 loaves and usually my family eats 2 as soon as it is done. I grind the wheat fresh in my wheat grinder and I use white wheat. I have used whole wheat flour from the store and it works just as well. Try it!
Whole Wheat Bread
Put 5 c. warm water in the Bosch. Add 3 T. SAF yeast and 1/3 c. molasses and 1/3 c. honey and mix it up. (You can use all honey or all molasses, if you prefer). Let is sit for 5 minutes to get the yeast going.
Add 5 c. wheat flour, 2/3 c. oil, and 1 1/2 c. rolled oats(old-fashioned). Mix well and let this mixture "sponge" for about 20-25 minutes. That means let is rise in the bowl of the mixer. It makes the bread lighter.
After it has "sponged" Add 1 T. salt and 2 T. Dough enhancer. Mix.
Begin adding wheat flour and bread flour 1 cup at a time...stopping between additions until the dough cleans the side of the bowl. It is usually 1/3 bread flour to 2/3 wheat flour.
You can make this 100% whole wheat if you prefer...we like it a little bit lighter.
Knead in the Bosch for about 8-10 minutes. Turn out the dough and divide into 5 loaves;
each weighing (yes, I weigh the loaves) about 22.5 ounces.
Shape them and put them in the greased pans, cover with plastic wrap and turn on the oven to 350 degrees. Let them rise until double; about 30 minutes and bake for 30 minutes.
So good and so good for you!
You can make hamburger buns, rolls, cinnamon rolls, whatever, with this basic dough!

You can also mix 1/2 whole wheat and 1/2 white flour.  It's a good way to transition your family into eating 100% whole wheat if that is your goal.

Sifter....woohoo!

Now....I like using whole wheat, white whole wheat, mind you. BUT....when I go to make cookies or other non-bread recipes I use soft white wheat.  It has less protein and makes for a better product....less gluten.
ok...so I admit it...i still don't like the wheatiness in my cookies quick breads, muffins,etc.
 All that lovely bran! (groan)
TaDa! I found a sifter for my Bosch !
I LOVE you sifter!!!
It fits over the bowl and low and behold...it sifts all the bran out of the flour!
AMAZING!
To test it out I made my regular chocolate chip cookie recipe. Yum! 
I did learn this..the flour is REALLY fluffy after you sift it and doesn't measure exactly true.
FLAT COOKIES!
So I will have to adjust next time.
You still get the nutrition from the whole wheat...with less fiber!  I figure...it's fresh ground. I will sacrifice a little fiber.



You can use the leftover bran on your cereal, yogurt, in other baked goods to get that fiber back in your diet!

Flaker Mill


This week I ordered a flaker mill attachment for my Bosch mixer. It gives me the ability to flake any kind of grain or seed fresh...instead of storing rolled oats. I can now buy the whole oat groats and flake..or roll...them myself. I tried it today! It was cool!!! It worked perfectly and very quickly. I flaked about 4 cups of oats in about 3 minutes. They taste yummy and are a little thicker than a store-bought rolled oat. They are also absolutely fresh! Which means more nutrition for your family! Yay!

Pizza Dough

Here is the recipe I use for pizza dough! I make it in the Bosch and it will make 2 sheet pans of pizza.

3 c. warm water
2T. honey or sugar
2 T. yeast I use SAF
1 T. salt
1 T. Dough enhancer
6-8 cups flour-all white, all wheat, or a combo

Put water, honey and yeast in mixer. Mix up and let sit for a few minutes till it bubbles. Add 3 c. flour, salt and dough enhancer. Mix till smooth. Add flour until it cleans the bowl. Knead for 5 minutes if using white flour, 8 minutes for wheat and combo.

Rise till double and make your pizzas. Bake @ 400 degrees for around 15-20 minutes.

I don't put the salt in my dough. I like the taste a lot better. Try it both ways and see which you prefer!

FASTER, STRONGER, QUIETER!



So...I have had my Bosch for a few years. They last forever! I could have just kept going strong for a long time. But...the "new and improved" Bosch Universal Plus came out recently...and I HAD TO HAVE ONE! So...I subbed for a co-worker for a couple of weeks and saved up my pennies! It arrived today....yes! It has a stronger motor, bigger capacity, the cord goes in underneath it (that used to really bug me that the cord just hung around behind it...always in the way!) and suction cup feet...so it doesn't move around when it kneads.

But it gets even better....I made my usual 5 loaf batch of bread! It is a dream. Quieter! Stronger! Easier to clean! (the drive-shaft comes out of the middle in the Universal Plus).

I LOVE IT! If you want to make nutritious bread for your family...where youAdd Image control what is in it, you KNEAD (get it!) a Bosch mixer and a Nutrimill Wheat Grinder!


The other great thing is that you can make triple batches of cookies or whip 1 egg white into 1 1/2 cups of meringue...It is so user friendly!

My First Post


This is my first post! I thought I would add a photo of the bread I made the other day! 5 loaves in 90 minutes using a Nutrimill wheat grinder and my Bosch mixer! I love them! I decided to start this blog to give you ideas I learn along the way, food storage recipes and just yummy stuff I have found, random thoughts that go on in my head...scary...and of course funny stuff that happens to me!
